Black caviar remains a festive product, and its seasonality is clear in the data. November and December account for 32% of all shipments, driven by corporate gifts, Christmas orders and preparations for New Year’s celebrations.
Yet the market does not operate for only two months of the year. The remaining 68% of shipments are spread across the rest of the year. Restaurants, distributors, specialist retailers and private customers order caviar year-round. Producers and exporters can therefore develop international sales throughout the year while preparing for a sharp rise in volume during the fourth quarter.
During peak season, it becomes even more important to avoid dispatching late in the week. Courier networks face heavier demand in November and December, so booking early, providing an accurate address and ensuring that the recipient is ready all matter even more.
Seasonal profile of shipments
The peak is corporate gifting and the festive table; in summer the segment lives on repeat orders from restaurants and distributors.

The recipient must respond to calls and requests from the courier or customs authorities, provide documents promptly and pay any applicable taxes and charges. Even a correctly prepared shipment can be delayed if the recipient is unavailable.
